The production of this Sake is limited to 1500 bottles this year. Pressed using the traditional Fukuro Shibori method (bag drip) with modern unique technique of the brewery, Kaze no Mori is able to eliminate the issue of bag drip which is being exposed to oxygen for a long time with the aroma being volatilized, by submerging a basket shaped screen on the moromi. This will allow the Sake to be extracted without being exposed to the surrounding air.

 

A very delicate and exquisite taste with fine stream of bubbles gently caressing on the surface of the tongue due to the Bodaimoto brewing method which Kaze no Mori utilizes for all their Alpha series. Made with the brewery’s #7 kobo, this Sake displays amazing fruity aroma on the nose with lots of strawberry and pear. A balanced grapefruit taste is what comes out of every sip and ending with a smooth and clean texture in the mouthfeel.
